Garam Masala

Garam Masala is a mixture of spices which is usually mixed into Indian dishes close to serving time. You can buy it at Indian stores, or make it yourself. There is quite a variety of Garam Masala recipes. This one is from Madhur Jaffrey:

Put all the ingredients into a coffee-grinder or spice-grinder and grind to a powder. Store in an airtight jar.
