Spinach with Parmesan

Serves 3 or 4 people.

Directions

You will need to use your broiler. Boil spinach according to directions until done. Drain thoroughly and chop if not already chopped. Heat the olive oil in a pan that can go in the oven. When moderately hot, add the minced garlic and fry until light brown. Remove from heat and add the cayenne (as much as you want), salt and pepper. Stir. Add the spinach and stir so that the spinach is coated with the oil. Sprinkle Parmesan over the top. Broil until the Parmesan is melted and brown (if you like it brown).

Comments

Grate the Parmesan yourself -- do not buy it pregrated as it will taste dry.
