Basque Potatoes

Ingredients
- 4 medium russet potatoes (or more -- can use red potatoes too)
- 1/4 cup olive oil
- 4 cloves garlic, mashed
- 1 teaspoon paprika
- Cayenne to taste
- 1 teaspoon crumbled dried rosemary
- 1/2 teaspoon powdered thyme
- 1/4 cup coarsely chopped parsley
- Salt and pepper to taste
Directions
Preheat oven to 375.
Scrub the potatoes well. Peel if desired. Cut into 1 to 1.5 inch
pieces. Heat olive oil in large oven-proof pan. Add garlic and saute.
Add all spices except salt and pepper. Add potatoes, salt and pepper.
Stir. Put in oven and bake covered for 15 minutes or until
potatoes are soft. Remove lid and cook 25 -- 35 minutes
more or until potatoes are golden and soft. Stir occasionally during cooking.
