Burritos
Jim and Heather's recipe
Ingredients
- Flour tortillas
- Burrito
Chicken or
Taco
Beef (omit for a vegetarian burrito)
- Burrito
Beans
- Chopped onions or scallions
- Chopped red or green peppers
- Picante Sauce (preferably ``Pace'' brand)
- Taco
Dressing
- Monterey Jack Cheese
- Chopped fresh or pickled jalapenos (optional)
- Chopped avacodo innards (optional)
- Chopped fresh cilantro (optional)
- Rice (optional)
Directions
Get all the ingredients ready. Heat an iron skillet or griddle
big enough to hold an open tortilla on medium-high heat. For
each burrito, put a tortilla on the skillet for a few seconds on
each side. This should make it pliable. Remove the tortilla
and fill it with all the ingredients (put the picante sauce and
dressing on last). Roll up the bottom and sides, and it's ready.
Comments
- Don't skip the beans, even if you're having chicken or beef -- the
bean liquid is essential.
- If you're using the burrito chicken recipe from this book, try not
to get too much liquid from the chicken pan into your burritos.
