Cajun Seasoning

Use this wherever a Cajun Spice mixture is needed. This can be used
as a rub for barbecued chicken -- fine indeed. Or substitute for the
mixture in Spicy Baked Chicken (the ingredients look pretty similar,
but the oregano and thyme give it a totally different flavor).
Ingredients
- 1 fat clove garlic
- 1/2 Small onion
- 1t paprika
- 1/2t ground black pepper
- 1/2t ground cumin
- 1/2t mustard powder
- 1/2t cayenne
- 1t dried thyme
- 1t dried oregano
- 1t salt
Directions
Mash up the onion and garlic in a mortar, and mix everything else in.
