Fish Sauce
Fish sauce can be found in bottles in oriental stores. It smells bad,
but don't worry, the food it makes doesn't, unless you use too
much. We usually halve the amount in recipes. We refrigerate the bottle
once opened. I'm not sure what you're supposed to do. (Actually,
I received the following in my mail recently.
You mention refrigeration of Thai fish sauce after opening. A major
maker in Thailand says that refrigeration is not necessary due to the
high salt content of the product. The fish sauce, however, should be
well sealed in storage to keep air out according to this same source.
