Garam Masala

Garam Masala is a mixture of spices which is usually mixed into Indian
dishes close to serving time. You can buy it at Indian stores, or make
it yourself. There is quite a variety of Garam Masala recipes. This
one is from Madhur Jaffrey:
Ingredients
- 1T cardamom seeds
- A 2-inch stick of cinnamon
- 1t black cumin seeds (use regular cumin seeds as a substitute)
- 1t whole cloves
- 1t black peppercorns
- 1/4 of an average-sized nutmeg
Directions
Put all the ingredients into a coffee-grinder or spice-grinder and
grind to a powder. Store in an airtight jar.

We've yet to find ``Black Cumin Seeds''. If you can find them somewhere,
let us know.
