Green Bean Salad

Ingredients
- 2 pounds fresh green beans
- 1 medium onion, halved and cut into paper-thin slices
- 1 clove garlic, minced
- Salt and freshly ground pepper
- 1/2 cup good olive oil
- 2 to 3 tablespoons balsamic or other good red wine vinegar
Directions
Wash beans, snap off ends and cut into 1-inch lengths. Steam or
simmer in salted water until they are crisp-tender. Drain thoroughly
and place in a mixing bowl with onion and garlic.
Sprinkle with salt and pepper; add olive oil and toss. Add 2 tablespoons
vinegar, toss again, then taste, adding more vinegar if desired. May
be served immediately or chilled.

blemish.
