Hummus
Adapted from The Tao of Cooking, Sally Pasley,
Ten Speed Press, 1982. ISBN 0-89815-069-8.
Ingredients
- 1 cup cooked chick peas (or 1 14 ounce can chick peas)
- 1/2 cup tahini
- 2 cloves garlic, peeled and chopped
- 1/4 cup water
- 1/4 cup lemon juice
- 3/4 teaspoon ground cumin
- 3/4 teaspoon salt
Directions
Combine all ingredients in a blender or food processor \& blend until
you have a smooth paste. Serve as a dip topping with pita bread.
Serves at least 4.
Comments
The guy at the Falafel Hut (restaurant here in Knoxville with excellent
hummus) says to use a lot of garlic, quite a bit more than this recipe.
Unfortunately, their hummus is a lot better than this recipe.
