Indian Okra with Coriander
This recipe was given to us by N. Nandhakumar from the net.
Ingredients
- About 30 okra
- 1 large onion
- 1x1 in. cube of ginger
- 1-2 hot green peppers
- 1 teaspoon black mustard seed
- 1/2 teaspoon urad dal (optional)
- 1 heaping teaspoon ground coriander
- 1-2 cups shredded cilantro (optional)
- 3 tablespoon vegetable oil
- 1 teaspoon salt
- 2 cloves garlic, minced
Directions
Wash okra and dry thoroughly. Cut off stems and slice lengthwise to
form halves. Cut onions and hot peppers into small pieces. Cut 3 thin
slices of ginger root and chop finely. Pour oil into wide saucepan,
add mustard seeds and heat. Just before the mustard seeds start
popping add the urad dal. When dal turns brown (in less than a
minute) add the garlic and ginger and cook for a few seconds. Then
add the onions and peppers. Saute until the onions become
translucent. Add coriander powder and stir. When spices begin to
stick to the pan and are brown, add the okra and salt and mix
thoroughly. Cover and cook on low heat until done. Add cilantro and
heat through.
Serves 4.
Comments
We have never used the urad dal. Instead we add the mustard seeds
to very hot oil and cook until they pop.
