Indian Stuffed Okra
From The Indian Epicure, Meera Taneja,
Mills and Boon Limited.
Also known as Bhindi Masalawale.
Ingredients
- 1 lb. okra
- 3 T dried mango powder
- 1 T ground coriander
- 1 t chili powder
- 1 t ground cumin
- 3 t . oil
- 2 medium tomatoes
- Salt
- Large pinch of dried mint
Directions
Wash and dry okra thoroughly and cut off the stalks and tips. Make
a slit in the center of each. Mix dry ingredients together in a bowl and stuff the
mixture into the slit. Heat the oil in a heavy frying pan
and gently add the stuffed okra. cover and braise until soft,
occasionally turning gently. Serve sprinkled with some finely
chopped tomatoes.
