Oatmeal Lace Cookies
The Memphis Cookbook, The Junior League of Memphis, Memphis, TN, 1980.
These are quick, easy to make, delicate cookies.
Ingredients
- 1/2 cup flour
- 1/2 cup granulated sugar
- 2 tablespoons geavy cream
- 1/2 cup melted butter
- 1/4 teaspoon baking powder
- 1/2 cup rolled oats
- 2 tablespoons light corn syrup
- 1 tablespoon vanilla
Directions
Sift flour, baking powder and sugar together in a bowl. Add to this mixture
rolled oats, heavy cream,
corn syrup, melted butter and vanilla. Drop by small spoonfuls on cookie tin,
leaving space for cookies to
spread as they bake. Bake at 375F for 6-8 minutes or until golden brown. Cool
slightly and lift from cookie
tin with spatula. Let harden on paper towel until crisp.
