Potato Salad

A standard and consistently good potato salad. The recipe comes from
the second book of recipes from the restored Shaker settlement in
Pleasant Hill, Kentucky. If you're ever in the Lexington area,
we wholly recommend visiting Pleasant Hill, staying for dinner and
spending the night. It is a beautifully peaceful place.
Ingredients
- 6 medium potatoes
- 2 tablespoons
Thin
French Dressing
- 1 tablesppon onion, chopped
- 1/4 cup celery, chopped
- 1 teaspoon green pepper, chopped
- 1 egg, hard boiled and chopped (optional)
- 1 tablespoon pickle relish
- 1/2 cup mayonnaise
- Salt and pepper to taste
Directions
Boil potatoes in their skins. When tender, drain and cool slightly.
Peel and dice potatoes. Add french dressing and toss. Let
this stand for at least one hour (if longer than one hour, put
it in the refrigerator). Add the rest of the ingredients (mayonnaise
last). Taste and adjust for salt, pepper or relish. Serve at
room temperature or cold.
